1 cup whole wheat flour
1 teaspoon baking soda
1/4 cup chopped/unsalted peanuts
1/4 cup oil
1/3 cup honey
1 teaspoon baking soda
1 teaspoon soy flour
1 egg
5 teaspoon vanilla
1 cup ground or grated carrots
Preheat oven to 325. Combine flours, baking soda and peanuts. Mix in egg, oil, vanilla, honey and carrots until well combined. Pour mixture into a prepared cake pan and bake for 15 to 20 minutes.
